In the Kitchen: Apple Parmesan Salad






















These days almost all my time is spent caring for Baby Z and sleeping. This means I have no time for intricate meals, but that doesn't mean my food shouldn't be tasty. In comes this delicious recipe partially concocted by my mom. It's healthy and soooooo good. Here's what you'll need to create it:
  • Spinach
  • Diced granny apple marinated in red wine vinaigrette dressing for at least 2 hours
  • Shredded parmesan cheese
  • Red wine vinaigrette dressing (if this is a little tart add a little extra sugar and some grenadine syrup to it)

  1. I like the idea of marinating the apple. My daily go-to salad is similar: organic spinach, diced apples, walnuts, and yesterday, beets and carrots. My dressing is typically Bragg's amino acid (soy sauce-like flavor, but with nutritional benefit), lime juice and cayenne pepper. I top with sesame seeds, and because I've cut out cheese I sprinkle on nutritional yeast. It's my substitute for parmesan. Sleeping and caring for a newborn sounds wonderful!

    1. Thanks Paula. I will try your recipe. Substituting parmesan with nutritional yeast sounds like a great idea. I'm actually trying to take cheese out of my diet right now, so will definitely try your tip.

  3. I love the way you marinate the apple too. I'm a big fan of salads and my favorite is baby kale with a lemon based dressing (lemon, evoo, and a touch of soy sauce with salt and pepper mixed together.) Hope you are getting some sleep! xx
